Lecithin supplements are derived from sunflowers, soybean, corn, fish, and eggs. Soy is the most used source by far, but since soybeans are often GMO, they should be avoided. Depending on which source the lecithin comes it can be in the form of powder and liquid formula (sunflower) or granulated (soybean).
Sunflower is less genetically modified than soybean; therefore, it is way safer to use for extraction. The process of extracting lecithin from sunflowers is much gentler than extraction from soybeans, which requires the usage of harsh chemicals. This means the purity of phospholipids in sunflower lecithin is much higher than the ones that come from the soybeans.
